Day 5 Winter Pavlova: Disneyland Paris Christmas Advent Calendar

The Disneyland Paris Christmas Advent Calendar just keeps giving. On the 5th of December the Disney pastry Chefs have opened their doors and shared the secrets of a recipe inspired by the magic of winter, the Disneyland Paris Winter Pavlova.

At part of the Christmas Countdown, behind door number 4 is a Guest favourite Pavlova. A meringue-based dessert is famous for its crisp crust and soft inside, usually topped with fruit and whipped cream.

Disneyland Paris Winter Pavlova Recipe

Ingredients

French meringue:

Egg whites – 4
Fine caster sugar – 200g

Mascarpone whipped cream:

Single cream – 1l
Icing sugar – 140g
Vanilla powder – 1g
Mascarpone – 400g
Vanilla flavouring – 1cl.

Red fruits compote:

Mixed red fruits – 500g
Caster sugar – 100g
Corn starch – 10g
Pitted cherries – 250g
Cinnamon stick – 5g
Water – 5g

To start this Disney classic recipe, please be aware that section of this are best prepared the day before.

How to make the French Meringue

As always start by Preheat the oven to 100°C.

Separate the eggs, and place the egg Whites in a bowl. Whisk these until they are stiff.

Once Stiff, slowly add the sugar until you create a firm meringue.

Place the meringue into a piping bag, and using a fluted-nozzle pipe our 9cm diameter disks onto baking paper.

Bake at the 100°C for around 60-75 minutes.

How to make the Mascarpone Whipped Cream

Place the mascarpone in the mixer bowl. Soften it with a little single cream, then add the rest of the cream. Whisk the mixture.

Start to thicken the mixture by adding the icing sugar whilst whisking.

Finally, add the vanilla powder and flavouring.

Place the contents of the bowl into a piping bag with a size 8 or size 10 fluted nozzle and place to one side ready for serving.

How to make the Red Fruits Compote:

Grab a Rondeau Pan, sometimes called brazier or brasier, it is a wide and somewhat shallow pan.

Mix the red fruits, cherries, caster sugar and cinnamon in the pan.

Bring to the boil and cook for 1 minute.

Mix the cornflour and water together to thicken and add to the pan.

Stir well and cook for 1 minute. Remove and cool.

How to Present the Disneyland Paris Winter Pavlova

To build the Pavlova you need to start with the base by placing a meringue disk in the centre of the plate.

Place a a bead of mascarpone whipped cream on top of the disk creating a gap in the middle.

Pour a spoonful of red fruit compote into the centre. We find adding a scoop of vanilla ice cream here too works well.

Cover with complete section in mascarpone whipped cream and place a spoonful of red fruits compote on the plate.

(Optional) For decorations use some small coloured maple leaves and sprinkle with raspberry powder. –
